
Let’s all pause and have a moment of silence for the beautiful food light that will be gone for a few months. *Silence*
Barry has installed some under cabinet lighting for me – so hopefully I can cure the orange tint with those…as soon as I have counters to put food on. You know, that’s kind of an important part.
Still making it with the crock pot, toaster oven, and single induction burner.

Here’s something I’ve learned about myself in this remodel. I “cut loose” by baking and cooking. I relax at night because my house is tidy and in order. I haven’t had that in a while – so I’ve been unable to relax. Ever. It’s caused me to be irritable and withdrawn. So. If I seem weird, that’s why. Even friends have said “are you mad at me?” Nope. I just need to make cookies.
That’s my confession. I’m moody. Do I get a free pass? No? I didn’t think so.

Real food I cooked last week:
Main Dishes (only 6 because I take Sunday off)
- Slow Cooker Ropa Vieja – Oh. My. Lanta. I had no idea when I was assembling this that it would be so amazing. It tickled my taste buds and I could chew it even with braces! Barry said, “This is REALLY good!” Served with basmati rice and applesauce.
- Slow Cooker Chicken Tacos – I thought that since I was having “soft” tacos, I could eat this. I mean, soft is in the name, right? But no. Soft tacos = no like braces. I was exhausted after eating this dinner. It was good, but I ate the rest as a burrito bowl. Served with salsa, cheese, sour cream, and lettuce. We also had sliced apples.
- Apple Cinnamon Crock Pot Pork Loin – We were super busy with kitchen stuff so I wanted something easy for dinner. I put this in right after breakfast and dinner was a cinch. Served with boxed mac-and-cheese (keepin’ it real) and buttered peas. Eli adores buttered peas.
- Leftover pork loin with green beans and macaroni. When Barry is out of town, I don’t cook.
- Chicken Burrito Bowls with leftover Chicken Taco meat…served with basmati rice.
- Leftovers – Barry wasn’t home so the kids and I cleaned out the fridge. Eli ate more peas. That kid and peas. It’s true love.
Baked Goods/Miscellaneous/Breakfast
**These items double as breakfast and snacks**
- Whole Wheat Banana Pancakes – So I do have an electric griddle. I set it up on the kitchen table and made pancakes. We really like this recipe. I served it with boiled eggs for protein. And as always, we have Kefir Smoothies.
- Self-Crusting Quiche – I make this a lot…we love it! It fits in an 8 inch square dish, so it fits in the toaster oven. I can throw whatever meat I want in there. And no crust worries! Served with toast and smoothies.
- Steel Cut Oatmeal with Bananas and Cobbler Topping – This is probably my favorite oatmeal recipe. I’m lying. All of them are my favorite. But this one? It’s special. Everyone loves it. And I made extra for me to have to eat later on…it’s easy on braces. Served with yogurt.
- Sunday morning we had scrambled eggs, toast, and bacon…bacon straight from Sam’s. Precooked. Keepin’ it real. Keepin’ it delicious.
- I made some Instant Oatmeal Packs and we had those two mornings for breakfast. I’m so glad my kids looooooooooove oatmeal. I served those both times with sliced apples.
- Cinnamon PB Granola– I had made this before my oven disappeared. I always serve it with yogurt and fruit. It’s a favorite around here.
