Soooooooooooooooooooo, yeah. I have no kitchen. Well, that’s a lie. I have one. It’s just gutted. There are no finished cabinets and no counters at all. No appliances, except the dishwasher that Barry rigged up so that I wouldn’t have to wash dishes for 4 weeks in the laundry tub. He’s a keeper.
I’m working on a complete meal plan for 4 weeks of meals that you can cook when you don’t have a kitchen – and I hope to have a grocery list to go along with that.
I’ve been using: one single induction burner, a toaster oven, a microwave, an electric griddle and a crock pot. So, I’m not suffering. And we’ve been eating well – it just takes a significant amount of time to make meals and then clean up. But, it can be done!

Real food I cooked last week:
Main Dishes (only 6 because I take Sunday off)
- Spinach and Cheese Stuffed Manicotti – Oh my lanta, guys. I just love this recipe. It speaks to me. It was actually my last fully cooked meal in the freezer. I pulled it out after a particularly busy day. Served green beans with butter on the side.
- Fried Rice with Baked Chicken – I made the baked chicken in the toaster oven and used the induction burner for the rice.
- Leftovers for the win! Spent the day taking cabinets out of the kitchen to sell to someone driving from NC. I’m not sure what people do without leftovers.
- Parmesan Sausage and Kale Soup – GUYS. Guys. This is the best soup I’ve ever had in my entire life. It gets even better the next day. I’m slobbering right now just thinking about it. Served with toasted cheese on homemade bread.
- Honey Garlic Chicken – This was super easy to throw together and I had everything I needed. That’s my favorite kind of recipe. Quick and easy. Served with white basmati rice and steamed broccoli.
- Crock Pot Meatloaf – There is no comfort meal better than meatloaf, mashed potatoes, and peas.
Baked Goods/Miscellaneous/Breakfast
**These items double as breakfast and snacks**
- Baked Oatmeal – Have you noticed I make this a lot? It’s because everyone loves it and it’s easy…and it works in a toaster oven. Served with bananas.
- Leftovers – We had a lot of little things from here and there. So we cleaned them all out for breakfast.
- Cereal and fruit before church – Keepin’ it real.
- Peanut Butter and Banana Quesadillas – Utterly amazing. And utterly simple. I can tell I’ll make these a lot. Served with a side of yogurt for breakfast.
- Baked Pancake – Again, another standby and easy to make in the toaster oven. Served with sliced apples and peanut butter for breakfast.
- Healthy Blueberry Muffins – This only makes 6, so I was tickled it would fit in my toaster oven. Super good with melted butter. Served with yogurt on the side for breakfast.
- Basic Muffin Recipe from the Red Bread Beckers Cookbook – Yep. There’s a reason I have an entire post dedicated to my favorite muffins.
